Peanut butter granola bars

I’m a big fan of peanut butter and granola bars.  Typically granola bars in the supermarket don’t appeal to me because of the adds in they use.  And also because the ingredients can be somewhat suspect.  I love making my own granola at home, so figured next step should be granola BARS.

Easy to pack, easy to eat.  And once again, the versatile nature of granola bars appeals to me.  One day you feel like adding in pumpkin seeds, the next you don’t.   If you are into raisins and dried cranberries (I am not) perhaps you could add them in.  I just won’t be doing that…

This recipe is not so much the most healthy, but it is simple and a few ingredients so it works.  One could leave out the chocolate (or use dark/raw chocolate) and add in more nuts and seeds.  I guess next time I will do that.

Ingredients:

1/4 cup of golden syrup (or maple syrup or honey!)
1/2 cup of peanut butter
3 teaspoons of coconut oil
1 teaspoon vanilla extract
2 cups of rolled oats
1 cup of rice krispy cereal (I used the cocoa rice krispy this time)
1/2 cup of chocolate chips – most to be mixed inside, leave some for garnish

Instructions:

On the stove, mix together the golden syrup and the peanut butter until melted and smooth.  Add in the coconut oil and the vanilla extract.  Stir around, then add in the oats and rice krispy.

Add in most of the chocolate chips at the end and mix quickly.

Line a pan with baking parchment, and then press the mixture into the pan.  Sprinkle the remaining chocolate chips on the top.

You could either use put this in the fridge for a no bake granola bar.  Or if you want it to be a bit more crunchier, pop it in the oven for 15 minutes at 176 C.  Cut and add.
