Pancakes

Yum, who doesn’t love having pancakes on a weekend?! If I’m actually prepared and have the ingredients needed (milk – I never seem to have milk at home) I’ll make some pancakes.

Chocolate Chips Pancakes, always, all the way.  I definitely always have chocolate chips at home, but no milk – not sure what the says about me?  But who doesn’t love a bit of variety once in a while – add in some blueberries maybe?!

So this particular time, I didn’t use a full on recipe (but I will share my usual pancake recipe anyways).  A couple months back, someone that I work with brought me a present of buttermilk pancake mix, apple butter and maple syrup.  They were all from this farm a few miles from where he lives and I absolutely loved it!  I love getting food from around the world – this was from a farm in Ohio – and having natural products as well.

This particular mixture is super easy, you just add in an egg and milk and you get these beautiful super fluffy buttermilk pancakes.  I’ve been trying to use this sparingly as I don’t want it to finish.  I think I have just about one cup of mixture left and think I may need to fly to Ohio and get some more.

Alas, I’m soon going to have to return to the usual recipe – still also good of course 🙂

Ingredients:

1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
Pinch of salt
1 cup milk
2 tablespoons unsalted butter, melted
1 egg
1/2 cup chocolate chips + more if you want to add some in

Instructions:

Mix together the dry ingredients – flour, salt, baking powder and sugar.

Then add in the milk, butter and the egg and whisk it all together.  Don’t worry if there are small lumps in there.   Last, but not least – if you desire – add in the chocolate chips! Best part.

Heat up your pan with some butter and pour in a ladle full of pancake mixture.  When the pancake starts to have some bubbles on top, check the bottom.  If it has the right pancake look, flip it over and shouldn’t take more than a minute or two.  Repeat until the mixture is finished and then EAT.  Example provided below.

Looks like I haven’t shared any, but I did … I swear.
