Hello Dollies

This is my actual favourite dessert to make (and eat) – it upholds my three requirements to be simple, easy and delicious.   Generally, when I make dessert, I don’t tend to eat much of it, but Hello Dollies, I will keep these all to myself.

I’ve been making Hello Dollies for years now, I grew up with my mother making them and then as times took over as chief baker in the house, so I had to learn this.  It’s so easy.  And the version I made today consists of a four ingredients: Butter biscuits, butter, chocolate chips and condensed milk.  That’s it.

There are variations to this that I sometimes like to add in, such as adding in shredded desiccated coconut to the base, or adding in nuts (pecans or walnuts, just to give it a bit more of a crunch) to the topping.  However, on this particular day, I had limited ingredients in my pantry/fridge so had to go with keeping it to the bare minimum.  I’m not complaining though and neither is anyone else.  Chocolate and condensed milk baked in an oven for 20 minutes – definitely not the healthiest in the world but I could care less at this point.

Definitely munching on one of these as I type this up, and will continue to eat them for the first of the day.  Nothing can stop me!

Ingredients:

Packet of butter biscuits (I use the leibniz brand, but one could use digestives as well)
Butter, around 3/4 of a cup and melted
Packet of chocolate chips (mini or regular)
Can of condensed milk

Instructions:

Preheat the oven to 175 celsius.

Put the butter biscuits in a food processor for a few pulses until it is crumbled, then add in the melted butter.  Press this into a baking pan until it is firm.  Put this in the oven for about 5-10 minutes so it hardens.

Once it is out of the oven, pour in the chocolate chips and then evenly pour the condensed milk over this.  Then it goes in the oven for 20-25 minutes.   Make sure the condensed milk doesn’t burn, and just turns a nice golden colour.

If you do want to add nuts, add these in on the top and once it is in the oven – take it out after 10 minutes and press the nuts back into the bars.   Then finish it off and eat 😀
