Since it’s Ramadan now, I typically like to have some friends over for an Iftar and with these friends I have to make lasagna. They’ve been on my case for a year to make them lasagna again and I’ve been useless in actually doing this. I guess it is time now. Anyways, totally a tangent, I’m not talking about lasagna here, I’m meant to be talking about brownies!!
So the brownies, I needed a dessert and something nice and simple that is easy to pick up and eat was necessary. I love brownies, I love chewy, moist and soft brownies with a nice top. I’m incredibly picky about brownies, most of the time I eat them and they are not as satisfying as they should be. Hence, my brownies have to be perfect in the chewy way – not too fudgy and not like a cake. Like a brownie you could get out of a box, but BETTER. I admit, I love box brownies but refuse to make them.
If you are into brownies just let this, this is the recipe for you. Beware, if you do share them, they will be gone almost immediately and you will be left with none. I’m still regretting not secretly saving one for myself. Good excuse to make some more then 🙂
¾ cup flour
½ tsp salt
¼ tsp baking soda
¾ cup sugar
¾ cup oil
1 teaspoon vanilla extract
2 tablespoons water
1 cup chocolate chips, melted
1 cup chocolate chips
Combine the flour, salt and baking soda in a bowl and set aside.
Melt the chocolate chips in the microwave – should take about a minute, otherwise continue in the microwave for another 30 seconds and mix.
In another bowl, mix together the eggs, sugar and oil well, then add the water and the vanilla extract. Add in the dry ingredients and the melted chocolate and incorporate all of it into a delicious batter.
Then add in the chocolate chips for an extra treat to the brownies. Pour it into an 8×8 pan after either greasing the pan or lining parchment paper over it (my preference in the paper, so easy to remove and cut then).
In the oven at 176 Celsius (325 Fahrenheit) for 30-35 minutes.
